I'd bet it was JayDee Maness as he did most of the movie stuff in LA at the time that movie came out.........

I'd be willing to bet, it was Weldon Myrick.
If you check out his website, www.weldonmyrick.com you will see his credits and he lists that he was playing on the soundtracks of Smokey and the Bandit, 1,2 and 3.
